This is a substantial hearty soup for cold winter days

 INGREDIENTS

This Middle Eastern inspired dish has been a family favourite for over 20 years, we love the combination of flavours. Serves 4 

Preheat oven 170 C, 325 F, Gas 3

Ingredients

Wednesday is market day. I bought my vegetables and at lunchtime I made soup. 

Carrot and Butter bean Soup

In a pan I put:

1. Can of drained butter beans 
2. One onion chopped 
3. Grated carrots 
4. Chicken stock cube 
5. Coriander or parsley to flavour 
6. Water 

Bring to the boil and simmer covered for about 20 minutes
