Wednesday is market day. I bought my vegetables and at lunchtime I made soup.

Carrot and Butter bean Soup

In a pan I put:

Can of drained butter beans
One onion chopped
Grated carrots
Chicken stock cube
Coriander or parsley to flavour
Water

Bring to the boil and simmer covered for about 20 minutes
