Today I'm making a spinach and cheese pie, all the family love it. For this recipe I use cottage cheese, feta cheese and pine nuts would be the authentic choice but this tastes good!
- I lb (450g) frozen spinach
- 2tbsp olive oil
- 1 chopped onion
- 1tsp dried oregano
- 4 eggs
- 1lb (450 g) cottage cheese
- 2 oz (55 g) grated cheddar cheese
- grated nutmeg, salt and pepper to taste (we like lots of nutmeg!)
- 12 sheets filo pastry
- 2 oz (55 g) melted butter
Preheat oven 375 F/190 C/ Gas 5
Heat the oil in a large saucepan. Add the onion cook until softened
Add spinach and oregano and cook over a high heat until most of the liquid from the spinach evaporates, about 5 minutes, stirring frequently. Remove from the heat and let cool
Break the eggs in a bowl and beat. Stir in cottage cheese, cheddar cheese, and season really well with nutmeg, salt and pepper. Stir in spinach mixture
Brush a baking dish (I use a square one about 9"x 9") with butter. Butter each sheet of filo as you layer it in the dish, about six sheets
Ladle in the spinach and cheese filling. cover with filo pastry. Brush the top with butter.
Bake until pastry is golden brown, about 30 minutes

We like it with a home made tomato sauce.
