Tarte Tatin

Tarte Tatin fresh out of the oven

There is still an abundance of apples about so I made a Tarte Tatin. Here's the recipe

    INGREDIENTS

  • 3 to 4 dessert apples
  • 30g / 1. 1/2 oz butter
  • 30g / 1. 1/2 oz soft brown sugar
  • 1/4 tsp cinnamon (optional)
    Sweet pastry
  • 225g / 8 oz plain flour

  • 110g / 4 oz butter
  • 80g / 3 oz sugar

  • 1 large yolk egg
  • Milk
    Pre heat oven 400 F / 200 C / Gas 6. I used a 23 cm / 9" flan dish 

Rub together the butter and flour until it resembles bread crumbs. Add the sugar. Mix in the egg and enough milk to form a soft dough. Take about 3 or 4 dessert apples. Peel core and cut into 8 pieces each apple. Spread base of flan dish liberally with butter. Sprinkle the brown sugar and cinnamon over the butter, this will caramalise on the apples. Arrange apples in flan dish. Roll out pastry a little bigger than the size of the dish. Place pastry on top of apples. Because it will form the base of the tarte it does not have to be pretty. Bake in the oven for about 25 to 30 mins. When it is cooked remove from the oven. Wearing oven gloves place a plate over the flan dish and very carefully flip it over. Voila!. Serve with cream or ice cream
